Dark Star Cellars
California, the most populous state of the United States, located on the Pacific coast of North America is bordered by Oregon, Nevada, Arizona and Mexico. The four largest cities are Los Angeles, San Diego, San Jose and San Francisco. California is also the home of and wine producing regions such as Santa Barbara and Northern California's Wine Country. In 1994, Dark Star Cellars was founded by Norm Benson. Their focus is on producing small lots of ultra-premium hand crafted red wines. They feel their success comes from a gentle treatment of their wines from harvest to bottling. To that end, their grapes are hand harvested and slowly fermented. Dark Star was put on a long list of potential names for the winery because Norm, their winemaker believed it symbolized his goal of producing stellar red wines, or dark stars. In addition to producing stellar wine, Norm wanted the winery and its label to honor his family. In the winery's ten year history their Ricordati wine has won 18 gold medals and a best in class at international wine competitions. Their Cabernet Sauvignon wine is really full bodied. On the nose its deep cherry and strawberry jam with spice that melts into a thick berry mouth framed in full tannins that linger on the finish. Their Merlot wine was the year of the color. It exhibits plum, white pepper, strawberry jam and maple syrup. Their Celebration wine, to make this wine they remove 100 gals of juice from each lot of grapes that comes to the winery during harvest. They place all the juice in one tank and slowly ferment it at forty degrees during the entire harvest, adding juice each time they harvest a vineyard. Dark Star Cellars is one of the best in the wine business and are aware that quality is not accidental but by high intention and perseverance and are devoted to follow it on any backgrounds.
