Their winemaker and vineyard manager work closely in their vineyard and with their growers to ensure balanced, premium quality fruit. excellent sun exposure, and granitic, rocky loam soil. The elevated, sunny location and rocky soil make Mount Aukum's vineyard the ideal microclimate for producing Petite Sirah and Zinfandel, which comprise the majority of their vines.

Mount Aukum Winery offers different type of wines such as Cabernet Franc, Cabernet Sauvignon, Fair Play Syrah, Cabernet Franc or Syrah, Cabernet Sauvignon or Sangiovese or Cabernet Franc, El Rojo De La Tierra, Fair Play Petite Sirah, Paso Robles Mourvedre and Zinfandel Reserve.
